This recipe is inspired by the fabulous chef Ottelinghi who uses bulgar and extra greens in his tabbouleh and no tomatoes! This quite suits people following the low fodmap diet so I’m running with it. I opted for a more traditional Mediterranean-style dressing but you could add some Baharat for a more Turkish flavour.

To ensure us fodmappers don’t miss out, I’ve prepared this recipe in a way that maximises flavour - firstly by slow roasting the cherry tomatoes so that they literally pop in your mouth and secondly by adding some baby rocket for some extra pow. The result is a delicious and hearty pasta salad that’s great for lunch the next day (if you have any leftovers).
