Chocolate and Hazelnut Protein Bars

These makes a great snack packed with protein, fibre, healthy fats from the nuts and lovely microbiome boosting polyphenols from the dark chocolate.

Top with hazelnuts or coconut - or both!

Ingredients (makes 12 bars):

  • 100g ground hazelnuts (buy or blitz your own)

  • 20g milled chia seeds

  • 125g of Superflora Plant-based Vanilla Protein Powder

  • 250g of crunchy peanut butter

  • 2 tbsp maple syrup

  • 80 to 100 ml of water

  • 150g of dark chocolate

  • 25g of chopped Hazelnuts

  • 10g of desiccated coconut

Method:

  1. Mix together the dry ingredients

  2. Stir through the peanut butter and the maple syrup to make a crumble texture

  3. Add enough water (start with 80ml) to stick everything together loosely. You want it to hold together, but don’t want it sticky.

  4. Press the mix into a 12 bar mold or a tray. Place in the fridge or freezer for 30 mins.

  5. Melt the dark chocolate in a Baine Marie. Spoon over the top of the mix and sprinkle with the chopped hazelnuts or coconut.

  6. Place back in the freezer overnight. Then pop out of the molds or cut into bars and store in a baking paper lined container.
